I've been trying to encourage my daughter to eat more fat as studies show that brain activity & performance decrease when good fats are not plentiful in the diet. She's a chip lover {not excessive} so I wanted to find something that would give her that crunch but also high flavor without all the ingredients we don't want. I also wanted to add in some of my beloved essential oils to boost the "good for you quotient" as well. Lime oil is a powerful antioxidant, great for digestion and blood sugar regulation. These were SO amazing that I can't wait to make them again and try a few more variations. Doterra Chili lime almonds2 cups almonds {I buy the roasted unsalted bags at Aldi}
1 1/2 T coconut oil 2 drops Doterra Lime Essential Oil 3/4 t chili powder 1/4-1/2 t garlic or onion powder 1/2 t Celtic Sea Salt 1. Preheat your oven to 350 degrees 2. Melt coconut oil in microwave, then add the spices and oil to it and mix well. 3. Place almonds into a bowl and pour the coconut oil mixture over them. Mix well. 4. Place almonds in one layer on a cookie sheet lined with parchment paper. 5. Bake for 15-20 minutes until nuts are browned lightly. 6. Allow nuts to cool and store in a covered container. I encourage my daughter and clients to eat a serving or two of nuts per day. These are perfect for study time as the crunch and flavors are alerting to the brain which will improve the study session.
